About Faculty
Dr. Ankanksha Kumari is an Assistant Professor in the Department of Food Processing Technology at A.D. Patel Institute of Technology, CVM University, Anand. She holds a Ph.D. in Food Engineering and Technology from BIT Mesra. Her expertise includes grain fortification, microwave-assisted processing, micronutrient retention, and food process engineering. She has published 13 research papers and filed 4 patents, of which 1 has been granted, and she is actively involved in teaching, research, and industry collaboration.
